Introduction:
Tocino is a sweet and savory Filipino dish made from cured pork. It’s a popular breakfast food in the Philippines and is usually served with garlic fried rice and eggs. Although you can buy pre-made tocino from the grocery store, nothing beats the homemade version. In this article, we will give you the perfect recipe for cooking tocino every time.
Ingredients:
- 1 kilo pork shoulder, sliced thinly
- 1 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 2 tbsp. garlic, minced
- 1 tbsp. salt
- 1 tsp. black pepper
- 1 tsp. red food coloring (optional)
Instructions:
- In a large bowl, mix the brown sugar, soy sauce, pineapple juice, garlic, salt, black pepper, and red food coloring (optional). Stir until the sugar has dissolved.
- Add the sliced pork to the bowl and mix until every piece is coated with the marinade.
- Cover the bowl with cling wrap and marinate in the fridge for at least 24 hours. You can marinate it longer for a stronger flavor.
- After marinating, remove the pork from the bowl and discard the excess marinade.
- Heat a non-stick pan over medium heat. Add the pork slices to the pan and cook for 5-7 minutes on each side or until fully cooked. You can also grill the pork if you prefer.
- Serve with garlic fried rice and eggs.
Tips for the Perfect Tocino:
- Slice the pork thinly to ensure that it cooks evenly.
- Use a non-stick pan to prevent the tocino from sticking and burning.
- Don’t overcrowd the pan to ensure that the tocino cooks properly.
- Adjust the cooking time based on the thickness of the pork slices.
- If you don’t have pineapple juice, you can use calamansi juice or vinegar as a substitute.
