Drop dumplings like these are a Southern specialty and quintessential comfort food. The simple dough is similar to a biscuit, but the batter is dropped directly into a hot liquid instead of being rolled, cut out, and baked. The dumplings are then simmered directly in the soup or stew in which they will be served, such as in a classic recipe for chicken and dumplings.

What is a Dumpling?

The word dumpling refers to a myriad of related dishes from all over the world, from har gow to kopytka to gyoza. Although the actual origin of this style of homey dumplings has yet to be discovered, it is noted that they were first used as sustenance when meat was scarce. Drop dumplings are a comforting addition to a wholesome chicken or beef stew or soup and are very easy to make.

Do I Need To Buy A Lot of Ingredients?

This recipe creates fluffy, hearty dumplings with only four ingredients: flour, baking powder, salt, and milk. They are an easy and delicious way to expand a meal and make any comforting stew or soup even heartier. Feel free to garnish with parsley or chives at the end for some color.

Is It Possible to Overcook the Dumplings?

If you add the dumplings too early and they cook much longer than 15 minutes (depending on the size of the dumpling), they will begin to break down. To ensure perfectly cooked dumplings, set a timer and do not peek under the lid. The soup should remain covered so steam can build up and cook the top of the dumplings while the simmering liquid cooks the bottom.

Tips For The Most Pillowy Dumplings Imaginable

  • Nap time—Give the dumpling batter time to rest before dropping spoonfuls into the stew or soup. This rest time allows the baking powder to activate, resulting in a fluffier dumpling.
  • No packing—It is important not to compress the dumplings into tight balls but rather let them fall off the spoon into the broth with just the nudge of a finger or another spoon.
  • Make your own—If you do not have baking powder in your pantry, you can make your own. To get 1 teaspoon of baking powder, mix together 1/2 teaspoon of cream of tartar, 1/4 teaspoon baking soda, and 1/4 teaspoon of cornstarch.
  • Soak it up—The dumplings will soak up a lot of broth as they cook, and the flour will thicken the liquid slightly, so add a little extra liquid to your stew or soup.
  • Yield—When using a large dinner spoon and a heaping amount of batter, the recipe makes about 12 big dumplings that cover the top of a Dutch oven. Make smaller dumplings if you like, and adjust the time accordingly.

Feeling Adventurous? Try This:

  • Add cooked drop dumplings to chili.
  • Serve leftover dumplings with gravy.
  • Boil the drop dumplings in lightly sugared water and serve as a dessert topped with jam and whipped cream.

How to Store

Store leftover dumplings refrigerated in an airtight container for up to 3 days. Dumplings stored in soups or stews will increase in volume over time and may break apart or become soggy.

FAQs

Why are my drop dumplings tough? ›

Don't Overwork the Dumpling Dough

Stir everything together until the wet and dry ingredients are combined and you don't see any more dry flour. The dough might look a little lumpy, but that's okay! Overworking the dough is one of the easiest ways to end up with tough dumplings.

How do you keep dumplings from falling apart in soup? ›

If you add the dumplings too early and they cook much longer than 15 minutes (depending on the size of the dumpling), they will begin to break down. To ensure perfectly cooked dumplings, set a timer and do not peek under the lid.

Why are my stew dumplings soggy? ›

Double-check that you added the correct amount of baking powder and that it's not expired. Additionally, if the dumplings don't have room to grow in the pot, they may not rise properly. Make sure to drop them spaced apart and on top of the meat and vegetables so that they don't sink into the stew.

Do you cook dumplings covered or uncovered? ›

Cover and simmer until dumplings are cooked through, about 15 minutes. Once you have covered the pan, do not uncover and peek while the dumplings are cooking! In order for the dumplings to be light and fluffy, they must steam, not boil. Uncovering the pan releases the steam.

How to make dumplings more juicy? ›

Hand-mincing meat and adding more pork belly results in the juiciest dumplings. Traditionally, some Chinese cuisine uses hand minced meat for their dishes. For example, lots of dim sum items like siu mai, pork buns, beef meatball, and more use hand minced meat to control the texture and fat content of the dish!

Why did my soup dumplings fall apart? ›

Homemade dumplings can fall apart for a number of different reasons, or any combination of them. Often they burst during cooking because they have too much filling for the amount of dough. Some doughs are too dry, so the dumplings won't stay sealed. Others can be too wet and sticky and end up tearing.

How do you cook dumplings without them falling apart? ›

Whether you're making potstickers, pierogi, or any other type of dumpling, here are some tips to help prevent them from falling apart: Use the Right Dough:Start with a well-balanced dumpling dough. Ensure it's not too sticky or too dry. Adjust the flour and water ratio as needed.

Are soup dumplings different from regular dumplings? ›

A soup dumpling is similar to other dim sum. In other words, a wonton wrapper is filled with a little seasoned meatball. The ingredients may include pork, crabmeat, shrimp, or a combination. The unique element of these nibbles is the soup enclosed by the dough.

How do you know when dumplings are done? ›

Steamed dumplings require a test so simple that the only tool you need is a toothpick! Pierce the dumpling with a toothpick and if it comes out clean, you're good to go.

How do you thicken broth for dumplings? ›

Use Cornstarch to Thicken Chicken and Dumplings

To give that a little thicker texture we're going to add 1 cup of cool water to 2 tablespoons of cornstarch and stir it up well. Make sure the soup is brought back to a good boil and go ahead and stir in the cornstarch mixture.

Why are my dumplings not light and fluffy? ›

The trickiest part of the dumplings remaining fluffy lies with the cooking time. If the dumplings are cooked for too long, then they will become hard. If they are cooked and allowed to remain in the heated environment – in the hot liquid or covered in the hot pot, then the dumpling will contract and get hard.

How do you make dumpling filling less wet? ›

If you find that your filling has too much liquid, I recommend draining the entire mixture in a colander. Another trick that I learned from my mother is to add a teaspoon of cornstarch or breadcrumbs to help soak up the liquid.

What causes dumplings to be chewy? ›

To achieve the desired chewiness, the main ingredient at play is gluten—the protein responsible for creating elasticity in dough. In Northern Chinese dumplings, the predominant use of wheat flour ensures a higher gluten content, imparting a hearty and chewy texture to the wrappers.

Why is my dumpling filling tough? ›

You're overworking your filling

While this may be the case, it will also lead to the ingredients becoming too bound together and sticky, and this can lead to heavy, dense dumplings. Instead, remember that less is more. Dumpling fillings should only be mixed until they're just combined and then left alone.

How do you keep dumplings moist? ›

Cover up. As you fold your dumplings, keep them covered with a slightly damp kitchen towel. This prevents the dumplings from drying out (dry skins can split when cooked).

Why are my Bisquick dumplings tough? ›

To make biscuit dumplings that are fluffy it's important to not over-mix the dough. Stop mixing once a soft dough forms. If you mix the dough too long, it will create dense and chewy dumplings that will take too long to cook all the way through.
