Sheet pan meal prep recipes are definitely one of my go-to's for easy and efficient prep because you can load them up with veggies, and serve them in so many ways! From breakfast bakes, to buddha bowls, to burrito bowls, pita or wrap filling, and sheet pan dinners, there is so much variety.

Tips for the best sheet pan results:

  • Roasting time - pick veggies with a similar roasting time: nothing worse than having to pick out veggies that are done before the others; alternatively you can place veggies with different roasting times on separate halves of the pan or separate pans
  • Overcrowding - don't overcrowd the pan: veggies need some space to roast properly, and overloading the pan means they will take longer to roast and may get soggy as their neighbours release liquid
  • Toss in oil - oil is absolutely necessary to prevent dried out veggies. Toss them in a bowl, then transfer to the pan to remove excess oil. I always use olive oil; 2 tablespoons per 5 cups of veggies

Variations

It's so easy to mix up the flavor profiles of your sheet pan meal prep recipes by adding different spice rubs or sauces. Here are a few idea to get your creative meal prep juices flowing:

  • Spice rubs - have a favorite sheet pan meal, but tired of the same flavor profile over and over again? Try using a different spice rub! Here are 7 homemade spice rub blends to try.
  • Sauces and dressings - add a dipping sauce on the side, like this tzatziki sauce, homemade ranch dressing, green goddess dressing, or this creamy tahini dressing.

i'm confused, in the lunch section there are a bunch of recipes for bowls that have nothing to do with sheetpan dinners?

Hi Cynrok, I can see why you may have been confused! To clarify - each of these lunch bowl recipes is cooked up on a sheet pan. While the image shows the finished meal in a bowl, if you click over to each of the recipes you will find that they are indeed sheet pan meals. I hope this helps!

Hi! I think it comes down to personal taste. Personally I don't enjoy roasted vegetables after they are frozen/thawed as they get a bit mushy.

The whole concept is such a terrific idea. Thanks…

FAQs

Do you cover sheet pan dinners? ›

Foil is the right choice when you're roasting at temperatures of 425°F (220°C) or higher. Unless it's labelled non-stick, foil needs greasing, and — surprise! — it makes no difference if the shiny side is up or down. Cover the baking sheet completely, including the sides and corners, to catch any mess.

Can you prep sheet pan meals ahead of time? ›

What is the basic of sheet pan dinners? ›

A sheet pan takes the concept of a one-pot meal and flips it onto a pan. It saves time, makes clean-up easier, and doesn't require expensive equipment or fancy ingredients. Just start with your protein of choice, then add vegetables, fat and flavorings, and roast at high heat until everything is golden brown.

What size sheet pan for sheet pan dinners? ›

The right baking sheet to use for sheet pan dinners is called a half-sheet pan. It's made of heavy-gauge metal, measures 18 by 13 inches, and has a 1-inch rim all the way around. It's sturdy enough to take high oven heat — and sometimes broiler heat if your recipe calls for it.

Can you use parchment paper for sheet pan recipes? ›

Aluminum foil and parchment paper are your friends.

Line the pan with either foil or parchment before cooking to help make clean-up easy! Remember: If you're broiling, do not use parchment paper, which can catch fire. Go with the foil, and mist it with cooking spray to prevent food from sticking.

What temperature do you cook a sheet pan at? ›

Temperatures range from 375-400°F for sheet pan meals. Depending on the vegetables and protein you've chosen, it may take anywhere from 35-45 minutes to cook thoroughly. Remember if you've chosen something you know will overcook in that period, you want to add it in later on in the cooking time.

What is the difference between a baking sheet and a sheet pan? ›

Quarter sheet pans are typically 9 by 13 inches (a standard size for sheet cakes), half sheet pans are 18 by 13 inches (this is the size of most pans described simply as baking sheets) and full sheet pans are 26 by 18 inches (too big to fit in many home ovens, but the standard commercial size).

What are the benefits of sheet pan cooking? ›

So why cook a sheet-pan dinner? I see two main reasons: You want a largely hands-off cooking process: By moving the food to the oven, there's less for the cook to do. That's because the primary mode of cooking in the oven is convection, in which the energy transfers to the food via hot air.

What does a full sheet pan look like? ›

Full sheet pans are 26″ x 18″ and are designed for commercial ovens. These pans all have a raised rim that's about 1-inch high. How do I know what size sheet pan I have? You can easily determine your baking sheet's size by using a measuring tape or ruler to measure the width and length of the inside of the pan.

Can you cook directly on sheet pan? ›

Indeed, baking sheets work well as pans for making cookies, roasting veggies, and even baking smaller foods like mini pizzas. But since baking sheets usually don't have raised corners to hold the contents in place, they might not be the best for recipes that call for deeper pans or contain liquids.

What are restaurant sheet pans made of? ›

Professional sheet pans used in commercial kitchens typically are made of aluminum, with a 25 mm (1 in) raised lip around the edge, and come in both standard and non-standard sizes.

What is the difference between a jelly roll pan and a cookie sheet? ›

A jelly roll pan has one-inch rims, which makes it ideal for working with liquid batter or food that releases juices as they cook. A cookie sheet only has one raised rim (for ease of handling), so it's not great for working with liquids like the Dutch Oven is.

Should I cover my baking sheet with foil? ›

Aluminum foil is safe for oven use, making it great for lining baking sheets. But you should not line the bottom of the oven with foil to catch spills and drips because it can melt in high heat and damage the oven.

Can you cover a pan with a baking sheet? ›

A Baking Sheet

It's a little bit bulkier than a regular pot lid, but it'll do the trick. It's an old test kitchen and restaurant secret for when the right-sized lid isn't available or doesn't exist.

Do you have to cover food when baking? ›

Covering dishes with aluminum foil during a bake helps lock in moisture. Loosely placing or tenting a sheet of foil over a dish can prevent the top from browning while the rest of your dish continues to bake.

Should I cover the pan when cooking? ›

Covering a skillet, saucepan, or pot while cooking helps maintain temperature control, which is important for even cooking. It helps bring liquid to a boil faster, too (which uses less energy, aka, it's more cost efficient, too). Covering the pot keeps steam from escaping, too.
